Happy Halloween!!
I planned to make a bunch of different Halloween cakes and cupcakes this year, but sickness got in the way! But I was able to make this pumpkin cake for dessert on Halloween. It was fun to decorate and the kids loved it!

Okay, so this cake is supposed to be easy, right? Wrong! My frosting (homemade cream cheese) would not thicken up! It was literally dripping down the cake. That has NEVER happened before! I was so frustrated but there was nothing I could do besides make more frosting. Of course, I was making the cake a few hours before the party and that just wasn't an option! So I decided to make the best of it. In the end, I was pretty pleased with how it turned out.

Yum, yum, yum!! That's what I have to say about this cake! It was so good! I had a lot of fun making these cakes. My friend had an oreo themed 1st birthday party for her little boy. He is a HUGE fan of oreos!!
I found these cake pans that make an oreo cookie and I was so excited to get them!! There are so many options -- ice cream filled cake, cream cheese frosting, or changing the color of the frosting to match a holiday (Halloween, Easter, Christmas, etc). So much fun!
Anyways, for his party, I made 3 Oreo cakes. His cake to destroy was a Double Stuf Oreo -- my favorite! I made an ice cream filled one -- cookies and cream -- yum!! I also made one that was dairy free.
He was so cute when it was time to eat his cake -- it took a while for him to dig in, but once he did, he went for it!
